How to cook fresh Pageot?

Oven Baked: Score the skin on both sides, season generously with sea salt, black pepper, and extra virgin olive oil. Stuff the cavity with lemon slices, garlic cloves, and fresh rosemary or thyme. Bake at 190°C for 20–25 minutes until the skin is golden and flesh flakes easily with a fork.
