In the Fridge: Keep the package in the coldest part of your refrigerator 0°C to 2°C and cook within 48 hours for the absolute best flavor

Do I need to scrape off any scales before frying this fish?

No! Jack Fish (İstavrit) doesn't have traditional loose scales like sea bass. They have smooth skin with a firm lateral ridge line. Our fishmongers wash and prep them thoroughly, so you can drop them straight from the packet into your flour coating with zero scraping required.

Can I cook this 1kg Jack Fish pack in an Air Fryer?

Is the central bone safe to eat, or should I debone it?

Because these are premium larger specimens (Large İstavrit), the central spine is defined but very clean. When pan-fried to a crisp, the smaller side bones soften completely. When eating, simply lift the cooked white meat off the top side with a fork, pull the main tail spine upwards to remove the backbone in one piece, and enjoy the remaining fillet completely bone-free.
