Light Rinse & Dry: Take the cleaned fish out of the box, give them a very quick rinse under cold running water, and pat them completely dry with a paper towel (this is the secret to maximum crispiness!).

The Coating: Toss the fish gently in a bowl with yellow cornmeal (mısır unu) or flour mixed with a generous pinch of sea salt.

The Skillet Fry: Arrange them side-by-side in a large flat frying pan with a shallow layer of hot vegetable oil. Fry on medium-high heat for 4 minutes until the skin turns extra crispy and golden, then flip carefully using a flat lid or plate to crisp the other side for another 3 minutes.
