How to Cook Fresh Skate Wing?

Classic Skate Wing with Caper Butter (Beurre Noir): Lightly dust the skinless skate wing in seasoned flour. Melt butter in a pan over medium-high heat and sear the wing for 3–4 minutes per side until golden brown. Remove the fish, add extra butter, capers, lemon juice, and parsley to the pan, then pour the foaming caper butter over the fish!

Crispy Pan-Fried: Shallow-fry in olive oil and garlic for 3 minutes per side until crisp on the outside and moist inside. Serve with crushed new potatoes and greens.
Does Skate Wing have small bones?
No! Skate Wing contains no small or fine pin bones at all. Instead, it features long, soft central strips of cartilage that separate easily from the succulent meat once cooked.

Is the skin already removed?
A: If you select our standard "Skinless" option, our fishmongers will fully skin and trim the wing so it is 100% ready to season and pan-fry right out of the vacuum pack.
