How should I handle and cook native lobster?

Handling: Keep the lobster in its breathable packaging in the fridge until ready to cook. Do not submerge in fresh water.

Humane Preparation: Place the lobster in the freezer for 20–30 minutes prior to cooking to render it completely dormant.

Cooking Times:

Boiling/Steaming: Boil in heavily salted water for approx. 12 minutes for a 500g lobster, adding 2–3 minutes for every additional 250g.

Grilling: Par-boil for 5 minutes, split in half lengthwise, baste generously with garlic herb butter, and finish on a hot grill for 4–5 minutes.
