The Perfect Whole Roast: If you choose Whole & Gutted, score the skin 3–4 times on each side. Stuff the cavity with fresh lemon slices, rosemary, garlic cloves, and a drizzle of olive oil. Roast in a preheated oven at 200°C for about 20–25 minutes until the meat turns opaque.

Pan-Seared Crispy Fillets: If you choose our Boneless Fillet option, cut each side in half. Fry skin-side down in a hot pan with butter and olive oil for 3-4 minutes, pressing gently so the skin stays flat and turns incredibly crunchy. Flip and kiss the meat side for just 1 minute.
