How to Prepare & Cook Live Whelks?

Purging / Washing: Rinse the whelks thoroughly under cold running water before cooking to remove any sea sand or debris.

Classic Boiled Whelks with Aioli: Bring a pot of heavily salted water (or court-bouillon with herbs and peppercorns) to a boil. Add the whelks and simmer gently for 10–12 minutes (do not overcook, or they become tough). Drain, cool, and pull the meat out using a small fork or pin. Serve with garlic mayo!

Garlic Butter Sauté: After boiling and removing from the shells, sauté the whelks briefly in a skillet with melted butter, minced garlic, white wine, and fresh parsley for 2 minutes.
Packaging & Storage Instructions

Specialist Chilled Packaging: Live whelks are shipped in insulated temperature-controlled boxes lined with seawater-dampened paper wrapping and ice packs. This creates a cold, humid environment (2°C to 5°C) that keeps the whelks moist and alive in transit without drowning them in standing water.

Immediate Care: Upon arrival, open the box immediately. Store the whelks in your refrigerator covered with a damp cloth or paper towel. Do not submerge them in tap water or store them in airtight plastic bags.

Best Consumed: Enjoy within 24 to 48 hours of delivery for ultimate freshness. Cook fully before eating.
How do I know if the whelks are fresh and alive on arrival?
When touched, live whelks will react or retract slightly into their shells. If a shell is open, tap it gently—if it slowly closes or reacts, it is alive. Always discard any whelks with broken shells or those that do not react.

Can I freeze live whelks?
We do not recommend freezing whelks while they are still raw and live. However, once you have boiled and cooked them, you can remove the meat from the shells, let it cool, and freeze it in a sealed container for up to 2 months.
