• 2 whole Sea Bass (scaled and gutted)

• 1 large Baking Potato

• 1 Lemon (thinly sliced)

• 3-4 Garlic cloves (sliced or crushed)

• Fresh Rosemary & Thyme sprigs

• 3-4 tbsp Extra Virgin Olive Oil

• Sea Salt & Freshly Ground Black Pepper to taste

1. Preheat the Oven: Set your fan oven to 180°C.

2. Prep the Potato Bed: Slice the potato into thin rounds. Arrange them at the bottom of your baking tray. Drizzle with olive oil, salt, and pepper. (Thin slices ensure they cook at the same time as the fish!)

3. Season the Fish:Pat the Sea Bass dry with kitchen paper. Score 2-3 deep diagonal cuts on both sides of the fish. Rub generously with olive oil, sea salt, and black pepper inside and out.

4. Stuff the Cavity: Stuff the belly of each fish with lemon slices, garlic, and the fresh herbs (rosemary and thyme).

5. Bake to Perfection:Place the fish right on top of the potato bed. Drop a few cherry tomatoes around the tray if you like. Bake for 20-25 minutes until the fish flakes easily with a fork.
